Wash the partridges, pat dry with kitchen paper, rub inside and out with salt and coarsely ground pepper and stuff each partridge with an onion. Sprinkle the bacon slices with thyme as well as most of the juniper berries. Wrap each partridge individually with bacon and tie with kitchen twine. Heat the canola oil in a frying pan and brown the partridges on all sides. Add bay leaves and the rest of the crushed juniper berries. Preheat the oven to 200 °C. Put the partridges in the oven and roast for 20 to 25 minutes, basting occasionally. Warm cabbage salad and potato dumplings are recommended as side dishes.
