For the apple kraut, place diced onion and lard in an unperforated steamer basket and steam covered (at 100°C for 4 minutes or at 120°C for 2 minutes).
Clean cabbage, cut into strips, add to onion cubes with apple juice, wine vinegar, bay leaf, cloves and sugar. Season with salt and pepper and cook (at 100°C for 60 minutes or at 120°C for 30 minutes).
Peel, core and chop the apple, add the cranberries or redcurrant jelly and red wine to the remaining ingredients and cook (at 100°C for 60 minutes or at 120°C for 30 minutes).
Season the red cabbage with salt, pepper and sugar.
