For the Christmas pear jam, wash and dry the lemon. Using a small grater, grate the peel all around and place in a saucepan.
Squeeze the lemon and add the juice to the pot. Peel the pears and cut out the core. Put the pear pieces in the lemon juice and quickly turn them in it so they don’t turn brown.
Then, on very low heat, cook the pears into mush. When they fall apart, blend them thoroughly with a hand blender. D
Weigh the puree and add equal amounts of preserving sugar. Add the vanilla bean whole and the cloves as well and boil everything for about 4-6 minutes until bubbly.
Then fish out the vanilla pod and the cloves and fill the boiling hot Christmas pear jam into pretty jars.
This Christmas pear jam also goes great with cheese. I like to give a basket of several types of jam as a gift - to do this, I make sure to find jars that look alike to make "sets".
