For the pineapple steak, cut off the top and bottom of the pineapple and quarter it. Remove the hard stem from the center of the pineapple and cut the flesh from the skin.

Puree half of the flesh in a blender and thinly slice the remaining flesh lengthwise.

Place the clean garlic cloves in a garlic press and mix into the pureed pineapple pulp. Season with coriander and chili pepper.

Place the steaks in a bowl and pour the pineapple puree over them. Cover the steaks with foil and let them sit in the refrigerator for a while.

Then dab the steaks with kitchen paper and brush them with a little oil on both sides.

Then place the steaks in the oven (grill setting) or on the grill. If small drops of red liquid appear during grilling, put 10 gr of butter on the top of the steaks.

Also place the pineapple strips on the grill and serve with the steaks. While grilling, let the marinade boil slightly, stir in the crème fraîche or whipped cream and serve with the steaks.
