For the dough, beat butter, grated coconut and sugar until thick and creamy. Season with vanilla pulp. Fold in eggs one at a time. Add milk and Batida de Coco. Mix flour and baking powder and add to the mixture. Let the dough rest for a while.
Meanwhile, cut pineapple with peel or peeled into very thin slices, as desired. Bake the dough in portions in a greased waffle iron until golden brown. Dust with powdered sugar and sprinkle with coconut flakes.
Serve with 1 scoop of ice cream and pineapple slices. Serve garnished with mint, if desired.
