Cook spinach until tender and cool. Fold in eggs and toast as an omelet in a non-stick frying pan with plenty of fat. Place on aluminum foil and spread slice cheese evenly on top. Roll up and wrap in the aluminum foil. Place in refrigerator, cut into slices and serve with Ciabatta Fresh Bread.
