Clean and rinse the cauliflower and divide it into roses. Dice stems and stalks. Boil roses and stems in enough boiling water for 2-3 minutes. Drain and place in a shallow baking dish. Season with salt and pepper, sprinkle with juice of one lemon.
Melt fat and cool to lukewarm for another time. Finely grate cheese. Mix eggs with milk and whipped cream.
Stir fat, egg milk and cheese and pour over cauliflower. Sprinkle breadcrumbs on top.
Place the gratin in the cold oven (middle shelf) and bake at 200 °C (uMluft 180 °C , gas mark 3) for about 20 min until nicely browned.
