For the pickled garlic in oil, peel the garlic cloves. Put them in a pot with the oil. Roughly chop the herbs and add them as well. Leave to infuse on a very low heat for about 40-60 minutes.
Pierce with a skewer and check if they are soft, then they are ready. Remove the garlic with a slotted spoon and place in sterile preserving jars. If you like you can add the herbs.
Fill with the hot oil until everything is well covered and then seal. If garlic oil remains, it can be used for other dishes.
If you like you can add a small chili pepper to the pickled garlic in oil.
