For the fish fillet with herb butter and tomato sauce, first warm the tomatoes with salt, pepper and sugar in a pot.
Peel and press the garlic cloves. Finely chop the herbs. Salt and pepper the fish fillets on both sides.
Melt the butter slowly in a large pan. Add the herbs and garlic. Add a little lime juice. Put the fish fillets in and fry on both sides at low temperature. Keep drizzling some of the herb butter over the fish fillets.
Portion the fish fillets with herb butter and paradeiser sauce and serve.
