For the potato roll first prepare the potato dough. Strain the potatoes and knead a dough with flour, semolina, egg and salt.
For the potato roll roll up the potato dough 1/2 cm thick. Fry the bacon, toast the breadcrumbs in the fat. Sprinkle the dough with bacon and breadcrumbs and roll up.
Roll in a moistened and greased cloth and boil in salted water for 1/2 hour. Lift roll out of water, unwrap and cut into slices. Sprinkle the potato rolls with parsley.

The potato rolls go well with roast pork.
