Brush a baking tray with butter. Place two discs of dough 25 cm ø on it and set aside. Peel and chop the onions. Remove pork rind and bones from smoked bacon.

Cut bacon into cubes and blanch in boiling hot water for 1 minute. Preheat stove to 240 °C (gas mark 8).

In a salad bowl, use a whisk to mix the curd cheese with the fresh cream. gradually add the flour and oil while stirring. Sprinkle in 1 pinch of salt and stir until homogeneous.

Spread this mixture evenly on each pastry sheet with a pastry scraper.

Sprinkle with chopped onions and bacon cubes. Bake in the stove for 15 min and bring to the table on the spot.
