For the Schmalzmuas knead a dough from flour and eggs.
With the help of a coarse grater, tear the dough into grated sticks and let them dry overnight.
Melt the butter and sweat the grated sticks in it. Deglaze everything with hot milk, add salt and raisins and let the grains of grated lard stew slowly until all the liquid has evaporated.
Serve the Schmalzmuas hot sprinkled with cinnamon sugar.
