For the Erdäpfelküchle slowly fry the onion in a pan with oil until nice and brown. Remaining Erdäpfelschmarren (or fried potatoes) mix with the eggs, salt, pepper and add the onion.
Grease muffin tray or silicone mold and spread the mixture in it. Bake in the oven at 200 degrees for about 20 minutes. Arrange the potato cakes and serve.
The Erdäpfelküchle are very good to take with you and thus also taste good when enjoyed cold. Who wants, makes them with diced bacon.
