For the farmer’s rolls, mix the egg yolks, coconut flakes, chocolate and nuts in a mixing bowl until well blended. Beat the egg whites until stiff peaks form and gradually add the sugar while continuing to beat (test with a knife).
Gently fold the beaten egg whites into the coconut mixture. Form small balls from the mixture and roll them in the dust and vanilla sugar mixture. Place the rolls on a baking tray lined with baking paper and bake in a preheated oven at 160°C for about 15 minutes.
