For the melon ice cream, grate and squeeze the lemon. Put the zest and juice in a blender, cut the melon in half, remove the seeds and peel.
Blend melon pieces, sweetener, lemon juice and zest until pureed. Then place in a mold in the freezer or make into ice cream in the ice cream maker.
If the mold is in the freezer, stir three or four times. Allow the melon ice cream to thaw slightly before serving.
If there are, you can add some melon pieces to the melon ice cream before serving.
