Peel the melon, remove the seeds and then cut the flesh into small pieces. Wash the zucchini and cut lengthwise into wedges or strips. Cut the lemon balm into fine strips and the young onions and garlic cloves into fine slices. Now heat some olive oil in a saucepan and sauté the onions together with the garlic. Add the zucchini and sauté for a while. Pour in orange juice. Add melon cubes and lemon balm and season with salt, honey, cayenne pepper and coriander.
