For the Chinese pancakes, put the flour and salt in a bowl.
Add the eggs and mix until a smooth batter is formed. Dilute it with the milk. Bake the pancakes.
Peel the lychees and heat them in 2 tablespoons of butter and the sugar. Add the liqueur and the lemon juice and let the litchis stew until the pancakes are ready.
Fold the pancakes double and place them back in the pan. Place a few litchis in the pancakes and pour the syrup over them.
Sprinkle the pancakes with powdered sugar, flambé with cognac if desired.
