For the florentines, preheat the oven to 180°C degrees. Mix the hazelnuts, candied orange peel, candied lemon peel, honey, sugar, vanilla sugar and flour.

Heat the whipping cream in a saucepan and stir into the hazelnut mixture with the butter. Line two baking sheets with baking paper and grease the latter additionally. Place the dough on the baking paper with a tablespoon and press apart. Do not place the dough too far apart, as the florentines will expand greatly during baking.

Bake the florentines in the oven for 10 minutes. Once baked, remove the florentines from the baking paper and place them smooth side up on a baking sheet. Melt the chocolate coating in a water bath and spread it on the smooth side of the florentines.

Classic Florentines are made with almonds, but you can also use a mixture of different types of nuts (for example, walnuts with hazelnuts).
