Buy ham roast with pork rind and score it diamond-shaped by the butcher. Rub it with pepper, salt, cumin and paprika, then fry it in a roasting pan in hot coconut oil or clarified butter until brown all over. Finally, place the rind side up. Pour on beef broth and wine. Put the roaster in the preheated oven (220 °C, gas mark 4) and cook the roast for 40 minutes. In the meantime, remove the peel from the washed potatoes, only halve the large ones. Also remove the peel from the shallots. Add both to the meat and if necessary add a little water. The liquid should always be about 2 cm high in the roaster. Roast for another 45 minutes, basting the meat from time to time with liquid.
Remove the meat, let it rest for 5 minutes, then cut it into slices and arrange them on a heated plate. Top with potatoes and onions.
Serve with seasonal salads and either the wine used for cooking or a cold beer.
