For the ice cream pastry, mix the ingredients into a fluffy sponge mixture. Spread the mixture thinly on a well-greased baking tray and bake in a preheated oven at 150°C convection oven until golden brown.
While still warm, cut into 2×8 cm strips, shape into arches using a rolling pin and allow the ice cream cookies to cool.
