For the vegetable sausage pan, dice vegetables, bread dumplings and sausages. Chop garlic. Sauté onion and garlic in olive oil. Then add the sausages and sauté until lightly browned.
Then stir in all the vegetables and sauté until soft. Stir in the diced bread dumplings and heat briefly.
Whisk the eggs with salt and pepper. Pour over the mixture and fry briefly until cooked. Then season with chives and parsley. If necessary, season with salt and pepper.
