For the matcha pudding with yellow plum compote, mix about one third of the soy drink with the matcha powder and cornstarch well, preferably with a small whisking rod.
Bring the remaining soy drink to a boil with the sugar, stir in the matcha-maizena mixture with a whisking rod, and bring to a boil. Pour into 2 glasses or bowls.
Quarter and core the yellow plums, boil them with the water, lemon juice and elderflower syrup until soft and spread on the matcha pudding. Serve the matcha pudding with yellow plum compote.
You can also prepare the matcha pudding with milk and garnish with mint or lemon balm.
