For the apple compote with raisins, peel the apples, quarter them, remove the core and cut the fruit into thick slices. Pour into a saucepan with the sugar, the raisins, the split vanilla pod and the white wine.
Cover and cook for four to six minutes, depending on the type of apple, until not too soft.
Serve the stewed apples with raisins lukewarm or cold.
