For the adzuki bean cream dessert, pour hot water over the beans in a pot and bring to a boil. Boil for about 45 minutes. Strain the beans and rinse well.
Bring to a boil again with fresh water and simmer for about 90 minutes. (Test to see if they are soft!) Drain the water and blend the beans with agave syrup, peanut butter, cinnamon and vanilla using a blender. Arrange and decorate with fruit as desired.
Preparation Tip:
Keep a little cooking water in case the adzuki bean cream dessert does not have the desired creamy consistency. If the cream is too thick after pureeing, add a little more cooking water at this point.
