For the leftover pancake, peel the potatoes, quarter them and cut into slices.
Peel and dice the onions. Cut the leftover meat into cubes. Fry potatoes in hot fat until firm to the bite and season with salt, pepper and paprika. Add onion and meat scraps and fry until potatoes are cooked, stirring frequently.
Mix eggs with cream and pour over potatoes. Cover and allow to set over low heat.
Season the leftover pancake if necessary and serve with salad.
The best accompaniment to the leftover Pfandl is green salad.
