Put cheese in a saucepan, pour milk (I) and stand for about 1 hour.
Allow to melt at low temperature while stirring, but in any case the quantity must not be too hot.
Mix egg yolks with milk (Ii). Allow butter to melt at low temperature. Add egg yolk mixture and butter alternately to cheese mixture, stirring throughout. Season with salt, pepper and a little nutmeg and stir at low temperature until cream is smooth and glossy.
Toast bread slices to your liking.
Divide fonduta evenly into four deep plates, perhaps garnish with freshly shaved truffle and serve with the fresh bread.
