Cut the rind from the cheese. Rinse the parsley or sage and pluck the leaves. Cover half of the cheese slices with some herb leaves. Place the slices of ham on top. Place one slice of cheese on top of each and flatten a little. Cut into triangles with a sharp kitchen knife. Put flour and breadcrumbs on one plate each. Beat egg in a deep dish. Season with cayenne pepper. Turn cheese triangles to start in flour, then in egg, and finally in bread crumbs on the other side. Heat oil in batches in a frying pan. Fry the cheese wedges for 2-3 minutes on each side until golden brown. Rinse lettuce, spread out a plate with it. Arrange cheese wedges on it. Toss the rest of the kitchen herbs in the frying fat and spread evenly over the cheese wedges. Garnish with lemon wedges.
