For the vegetable quiche, first mix the flour and butter with your fingers. Then add the water and a pinch of salt and knead into a smooth dough.
Wrap in plastic wrap and chill in the refrigerator for an hour. In the meantime, bring a pot of water to a boil. Boil the asparagus and the chopped carrots for 5 minutes.
In a pan, sauté the chopped onion and sliced zucchini with oil for a few minutes. In a bowl, mix the remaining ingredients and stir until smooth.
Roll out the dough and place it in the mold, pressing on the sides. Pour the top mixture into the mold and add the vegetables. Bake in a preheated oven (200 °C) for about 30 to 35 minutes.
If you want you can serve the vegetable quiche with salad. If you prefer to use other vegetables, you can make the quiche according to your own taste. With bacon it gets a spicy touch.
