For ginger beer, soak the ginger in hot water, peel and grate finely. Fill a vessel with the water, add the grated ginger, cloves, cinnamon stick, vanilla essence and sugar (perhaps a little more sugar to your taste).
Stir until the sugar has dissolved. Cover the jar and let steep in the refrigerator for a day. Strain before use and serve ice cold.
A mixture of 2/3 ginger beer and 1/3 carbonated mineral water with a dash of lemon juice tastes very good.
Preparation Tip:
For the ginger beer, the ginger does not necessarily need to be peeled.
