For homemade sausage salad, first peel and finely dice onions, sauté in a tiny bit of olive oil, deglaze with a little water and steam for 5-6 minutes until soft. This way the onions are easier on the stomach.

Peel the sausage and cut into slices. Also cut gherkins and radishes into thin slices.

Stir olive oil, white wine vinegar and mustard.

Add onions, cucumber, sausage and radishes, sprinkle with parsley and season with pepper.

Leave the homemade sausage salad to infuse for an hour.
