For the mini steaks in sesame-ginger sauce, season the pork steaks with salt, season with pepper and dust with flour. Sear on both sides in hot clarified butter. Remove from the frying pan and keep warm.
Sauté peeled ginger cut into fine sticks in the frying fat. Add soy sauce, clear soup, sesame oil and chopped chili pepper and bring to a boil. Season the sauce with honey and salt.
Briefly toss steaks in it and sprinkle with sesame seeds and coriander leaves cut into strips.
