Instructions:

For the roast pork with beer sauce preheat the oven to 80 °C. Preheat a plate for the roast in it.

Heat the fat in a frying pan. Brown the meat properly on all sides. Put it on the preheated plate.

Dissolve the gravy with the beer. Season with salt and pepper. Pour over the roast.

Pluck the leaves from half of the tarragon sprigs and place over the roast. Simmer for 2 to 2.5 hours at 80 degrees Celsius.

Baste occasionally with the jus. The optimal cooking point is reached when the core temperature of the pork loin roast is 70 degrees (check with a roast thermometer).

Pour the gravy into a roasting pan and reduce by half. Strain, pour in the cream and bring to the boil again. Chop the remaining tarragon and mix with the sauce.

Cut the roast pork and pour the beer sauce over it.
