For the Styrian root meat, first cut the carrots, celery, parsley and onion into noodles and boil in salted water until tender.
In this vegetable broth, add the meat, vinegar and chopped potatoes and slowly simmer until soft. Add a spice bag consisting of bay leaf, peppercorns and thyme.
Before serving, cut the root meat into thick slices. Arrange on plates, garnish with root vegetables and sprinkle with horseradish.
