For sour crackers, skin the crackers if necessary. Cut the crackers into thin slices. Chop the onion and parsley small and mix.
Place crackers on a large plate, season with salt and pepper. Marinate with vinegar and oil. Finally, place the onion-parsley mixture in the center.
