For the lung roast guglhupf first prepare the dumpling mixture. To do this, mix the bread cubes, eggs, grated cheese, parsley and milk and season with salt and pepper.
Season the lung roast and sear it.
Line the cake pan with bacon and put half of the filling in it. Place the lung roast on top and pour the rest of the stuffing on top of the lung roast. Cover the whole thing with bacon. Put aluminum foil over it and put it in the refrigerator overnight.
Bake at 180°C for about 45 min. (if the lung roast is a bit thicker, the baking time will be extended by a few minutes). Put the aluminum foil down and bake for another 15 – 20 min. so that the bacon gets nice and crispy.
Depending on your taste, any sauce can be served with the lung roast guglhupf.
