For the chicken soup, wash soup chicken and pat dry with paper towels. If the chicken is not yet divided, cut into coarse pieces.
Now heat some oil in a large pot and fry chicken pieces until hot and add 2 liters of water.
Bring the soup to a boil and then reduce the heat. Cover and simmer for about 2 hours.
Remove chicken parts and season soup with salt and pepper. Stir in a chicken soup cube if needed.
Serve the chicken soup with croutons.
Chicken pieces can either be cut into small pieces and added to the soup or sautéed and served as a main dish. You can also add soup noodles or rice to the chicken soup. Variably, you can also add vegetables after half the cooking time, but then the chicken flavor is no longer so intense.
