Deglaze with white wine, add mustard, lemon wedges, fresh herbs and a dollop of whipped cream. Mix in the shrimp and poach leisurely.
Cut the beans into fine slices, sauté them in a flake of butter and garlic, grate a peeled potato into the mixture, add mustard, salt and pepper, top up with whipped cream and finish with rocket sprouts.
Arrange everything in a deep dish and garnish with a bunch of parsley.
