Instructions:

Rinse and dry chicken wings. Cut off any wing tips: Spread tips off a tiny bit and cut through at joint with kitchen cleaver or possibly a large kitchen knife.

For marinade, stir through oil, seasoning sauce or tomato ketchup, brown sugar, vinegar and sambal ölek.

Place chicken wings in a shallow dish, spread sauce evenly on top. Allow to marinate for at least 6 hours.

Remove wings from marinade. Remove marinade with a kitchen brush. Dry chicken wings, season with salt and place on a baking sheet lined with alo foil. Roast at 200 °C on the middle rack for about 30 minutes.

For the leaf salad, peel cucumber and cut in half lengthwise, remove seeds. Finely dice the cucumber. Drain hominy. Rinse, clean and chop spring onions. Mix all salad ingredients, season to taste.

Remove chicken wings. Serve with the cucumber and hominy leaf salad. Dress with cilantro or parsley as desired.

Serve with: fresh white bread and various dips (a. D. jar).
