Wash the cherries well and drain. Place in a large saucepan and cover completely with cold water.
Heat slowly and simmer with the lid closed over low heat for about 10 minutes.
Meanwhile, spread a damp cloth in a large colander and place a large enough bowl under the colander.
Slowly pour the cherries and juice into the strainer and let stand for 30 minutes until everything is drained.
Then boil the juice again and pour it into clean bottles or jars.
The cherry juice can also be made with sour cherries. Then boil at will possibly with a little sugar or honey.
